Try these golden, crispy corn fritters for breakfast and they will be your new favourite. The grated halloumi takes the flavours to new heights. Serve them with a dip of your choice and enjoy it with your loved ones.

Ingredients

  • 1 cup self-raising flour, sifted
  • 2 eggs, lightly beaten
  • 1/2 cup chilled soda water
  • 100g haloumi, coarsely grated
  • 3 spring onions, thinly sliced, plus extra to serve
  • 1/4 cup chopped parsley leaves
  • 2 cups sweet corn kernels
  • oil for frying
  • pinch of salt

Instructions

  1. In a large bowl, mix flour, eggs, soda water and whisk until smooth and combined. Stand for 10 mins, then fold in the haloumi, spring onions, parsley and corn.
  2. Heat oil in a large pan over medium heat and put 4 tablespoon-full of mixture into the pan. Cook for 4 minutes on each side until golden brown.
  3. Repeat with remaining batter,  adding more oil if necessary.
  4. Serve hot and enjoy!
