Creamy Mushroom & Peas Risotto

Ingredients

  • 800ml Vegetable Broth
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2-3 garlic cloves
  • 100 gm frozen peas
  • 1 cup arborio rice
  • 1 tablespoon butter
  • 30 gm cheese
  • 1 tablespoon water
  • 250 gm mushrooms
  • ½ teaspoon mixed herbs
  • ½ teaspoon pepper
  • salt, to taste

Instructions

  1. In a sauce pan, prepare the broth over low heat as per stock pot instructions.
  2. Warm 1 tbsp olive oil in a large saucepan over med-high heat. Stir in mushrooms and cook until soft. About 3 minutes. Remove the mushrooms and set aside.
  3. Add 1 tbsp olive oil and fry the chopped garlic, stir in diced onions. Cook 1 minute or until soft.
  4.  Add Arborio Rice and stir. Ensure evenly coated with oil. Rice will turn a pale yellow colour.
  5.  Add the Mushroom water and stir until fully absorbed.
  6. Add warm broth 1/2 cup at a time until absorbed. Process should take about 20 minutes.
  7. When the risotto is done to your liking stir through the frozen peas for 1 minute.
  8. Remove from heat - stir in mushrooms, butter, and top with grated cheese.
  9. Serve immediately!
