Mutton Marination
  • 1 kg mutton
  • 4 tbsp ginger garlic paste
  • 200 gm natural yogurt
  • 4 big tomatoes, pureed
  • 2 tbsp red chilly powder
  • 2 tbsp coriander powder
  • ½ tbsp turmeric powder
  • 2 tbsp biryani masala
  • ½ tbsp cumin powder
  • ½ tbsp garam masala powder
  • 250 gm onions, caramelised
  • 1 tbsp lemon juice
  • 4 to 6 green chillies, slit into half
  • salt to taste
Biryani Masala
  • 1 cup oil
  • 3 to 4 bay leaves
  • 2 sticks cinnamon
  • 5 to 6 cloves 
  • 5 to 6 cardamom
  • 1 black cardamom
  • 1 star anise
  • Residue mutton marination water
  • 4 to 5 potatoes, cut into halves and fried
Biryani Rice
  • 4 to 5 litres water for boiling
  • 1 kg long basmati rice, soaked in 2 litres water for 30 mins
  • 3 to 4 bay leaves
  • 5 cardamom
  • 5 cloves
  • 2 stick cinnamon
  • 1 tbsp caraway seeds
  • 2 tbsp oil
  • Salt to taste
Biryani Assembly
  • 1 ½ cups onion, caramelised
  • 1 cup water, saffron-infused
  • ½ cup fresh coriander, finely chopped


Method for mutton preparation
  1. Combine all the Mutton Marination ingredients and marinate for at least 30 mins.
  2. Take 1 cup oil in a pressure cooker and keep it on high heat. Add bay leaves, cinnamon, cloves, cardamoms, black cardomom, star anise into the oil. Cook for 2 mins. 
  3. Add marinated mutton, reserved mutton marinade and mix well. Cover the lid and cook until mutton tenderises. 
  4. Uncover the pressure cooker and cook until gravy thickens.Add fried potatoes and mix well. Cook for two minutes on low flame/temp. Set aside the cooked mutton masala for cooling.
Method for cooking rice
  1. Take 4 to 5 litres of water in a big vessel keep it on a high flame. Add all the biryani rice ingredients and mix well until till the water starts to boil.
  2. Add soaked rice in the vessel and cook for 5 to 7 minutes or until rice is 90 percent done. Drain the excess water from the rice and transfer the rice to an another bowl.
Biryani Assembly
  1. Take the same vessel used for boiling rice and keep it on a low heat. Add oil from the mutton preparation. Then add a layer of rice, then a layer of mutton gravy. Keep alternating, topping off with rice.
  2. Add generous amounts of caramelised onions, saffron-infused water on biryani and drizzle with oil.
  3. Simmer the biryani over a low heat for 10 minutes or until all the water is absorbed and the rice and mutton are heated throughout.
  4. Garnish with coriander, Serve hot and enjoy!
