Spanakopita Triangles is a lip-smacking Greek recipe that enriches your taste buds with a delightful aroma and taste. This finger food recipe is so delicious that even the most picky eaters will relish its taste.

Ingredients

  • 1 medium onion, finely chopped
  • 280 gm baby spinach leaves, fresh or frozen
  • 4 sheets frozen filo dough, thawed
  • 1 tbsp olive oil
  • salt to taste
For the filling
  • ½ cup cottage cheese, crumbled
  • ½ cup feta cheese, crumbled
  • 2 tbsp parmesan cheese, finely grated
  • 1 egg
  • 1 tsp oregano
  • ¼ tsp black pepper, crushed
  • ½ tsp red chilli powder

Instructions

  1. Drizzle little oil and add onions to a large pan. Over high-heat, cook, stirring occasionally until the onions are translucent. 
  2. Add spinach and cook, stirring occasionally until the spinach withers. Drain the excess water and let cool for 10 mins.
  3. Add all the filling ingredients to the spinach and stir until well combined.
  4. Put 1 filo sheet on a work surface and brush lightly with oil. Place the 2nd filo sheet on top of the 1st sheet and brush it with oil. Repeat until all 4 file sheets are stacked on top of each other.
  5. Using a pizza cutter, cut the stack of filo sheets, parallel to the short edge, into 8 equal strips.
  6. Add about 1 tbsp of the filling onto the short end of the strip. Fold diagonally the bottom left corner to the right to make the shape of a triangle. Keep folding until the entire strip is folded into a triangle, Repeat for all the strips.
  7. Preheat the air-fryer to 180 °C and lightly coat the air-fryer basket with cooking oil.
  8. Place the 8 triangles into the basket and cook for 15 mins at 180 °C or until golden brown, flipping the triangles midway.
  9. Serve with your favourite dip and enjoy!

Tips:

Drain the water and allow the wilted spinach to cool. Use paper towel and press firmly on spinach as remove as much moisture as possible.
