Tricolour Rice Kheer Dessert Recipe

Kheer is a delicious dessert made from boiling milk with rice and sugar
with a variety of flavours - and refined with ingredients such as
cinnamon, almonds & pistachios. Seduce your palate by the taste of
dried fruits & nuts as well as the sweet and savoury taste of spices.
Ingredients
- 3tsp pure cow ghee
- 200 gm rice, soaked
- 2 litres full cream milk
- 300 gm sugar
- 200 gm khoya (optional)
- 50 gm edible rose petals
- 50 gm almond, slivered
- 50 gm cashew, diced
- 50 gm pistachios, blanched slivered
- 3 gm orange food colour
- 3 gm green food colour
Instructions
- Add soaked rice in the food processor and grind until coarse.
- In a vessel, put pure cow ghee and add milk. Keep the heat on high and bring the milk to boil.
- Once the milk starts boiling, reduce the heat to medium. Add grounded rice and cook for 20 mins or until the mixture starts to thicken. Keep stirring continuously to avoid the mixture from sticking to the vessel.
- Add sugar and cook for 5 to 7 mins. Mix well and keep stirring continuously to dissolve the sugar.
- (Optional)Add khoya to the mixture and mix until it dissolves.
- Make the heat low and let the mixture simmer. Add pistachios, cashew, almond and dried rose petals. Mix well. Let the mixture simmer on very low temp/flame for 5 to 7 mins and allow to cool.
- Top it off with almonds and pistachios.
- Serve hot or cold.

- Take the orange and green food colours in two separate bowls. Add 5 tsp of milk each and make orange and green liquid milk. Gently pour the orange liquid on the top 1/3 part of the vessel spread it evenly. Repeat for green liquid at the lower 1/3 part of the vessel.Add the dried rose petals on the lines to cover any inconsistency and to garnish the kheer.
Tips:
Boiling the milk is a must to let the kheer thicken. Stir continuously to prevent the mixture from sticking to the pot.
