Chicken and mushroom pie

Try this simple & savoury British pie, that’s bound to be a home favourite. Served with a side of chips, this is just what you need on a cold night.

Ingredients

  • 250g white mushrooms
  • 250g chicken
  • 1 block of puff pastry
  • 250 ml chicken stock
  • 1 tbsp crème fraîche / sour cream
  • 1tsp mustard sauce
  • 1tsp mixed herbs
  • 3tbsp oil
  • 1tbsp butter
  • 1tsp garlic
  • 1tsp black pepper
  • 1tbsp flour(optional)
  • Salt to taste
  • 1 egg

Instructions

  1. In a pan, heat 3 tbsp oil and add chicken along with butter and herbs. Sauté on medium heat till partially cooked.
  2. Add mushrooms and mustard sauce and mix well.
  3. Once the mushrooms start releasing water, add in the crème fraîche or sour cream, and give it a good mix. Season the mixture with salt and pepper. Cook for another 5 minutes.
  4. Once the chicken and mushrooms look cooked, pour in the chicken stock. Can use vegetable stock as well here.
  5. Let the mixture thicken to the desired consistency, if need be add 1tbsp flour to further thicken the mixture. Transfer to a baking dish.
  6. Cover the dish with the pastry sheet and seal the edges. Brush the top with egg wash and bake in a pre heated 200 degree oven for 25 minutes or until the pastry is crisp and golden brown.
  7. Cut into 4 portions and serve with a side of chips/fries.

Tips:

Chicken stock can be replaced by vegetable stock too.
