Light, clean & fresh on the palate. You can’t go wrong with this healthy and easy to prepare salad! Have it as a side or just a quick meal by itself.

Ingredients

  • 2 boneless salmon filets
  • 300g mixed salad leaves of choice
  • 1 tbsp olive oil
  • 1 tsp black pepper
  • 1 lemon
  • 1 tsp smoked paprika
  • 1 tsp mixed herbs
  • Salt to taste

Instructions

  1. Wash the salmon filets, and pat it dry with a kitchen roll. Prepare the salmon by sprinkling salt, pepper, herbs, paprika & the olive oil.
  2. Place the salmon in a foil lined baking tray and bake it in a 200 C preheated oven for 20 minutes.
  3. Divide the salad leaves into two separate bowls and dress it with lemon, salt & pepper. You can also use a vinaigrette of your choice for extra flavour.
  4. Shred the salmon with a fork into chunky flakes. Top each salad bowl with the flaked salmon & a lemon wedge.
