Chicken Mayo Sandwich

Chicken mayo sandwiches bring back childhood memories of packed school
lunches. Try this version of the classic which can be as versatile as you
want.
Ingredients
- 300 gm chicken breast
- 1 tbsp oil
- salt, to taste
Spice Marinade
- ½ tsp black pepper powder
- ½ tbsp lemon juice
- ½ tbsp ginger garlic paste
Filling
- 1 green chilli, finely chopped
- ¼ tsp black pepper powder
- 1 medium carrot, grated
- 1 capsicum, grated
- 1 cup shredded cabbage
- 1 cup mayonnaise
Instructions
- In a bowl, combine chicken breast with marination spices. and refrigerate it for 30 minutes.
- In a medium pan, add 1 tbsp oil and add marinated chicken. Add very little water and bring it to boil. Remove the chicken from the pan when the water dries and chicken is cooked.
- Add the filling mixture to the shredded chicken and mix well.
- Place lettuce on one of the pieces of bread and spread the chicken-mayo mixture. Optionally add desired condiments or sauce and bring the two pieces for bread together.
- Serve hot or cold, with your favourite dips
