A crunchy chicken snack with a cheesy centre to munch on. Serve it up as an appetiser with a chilli dipping sauce to spice up your meals.

Ingredients

  • 20 spring roll sheets
  • 250 gm boneless chicken breast, shredded
  • 1 cup cheddar cheese
  • wheat flour paste, for sticking
  • oil, for frying
  • szechwan sauce, optional, for dipping
Filling
  • 2 tbsp olive oil
  • 2 spring onion, finely diced
  • 3 green chillies, finely chopped
  • 1 tsp ginger garlic paste
  • salt, to taste
  • 150 gm cabbage, thinly sliced
  • 1 green capsicum, grated
  • 2 small carrots, grated
  • 1 tbsp soy sauce
  • ½ tbsp black pepper
  • ½ tbsp white pepper
  • 1 cup spring onion leaves, finely chopped

Instructions

  1. Poach the chicken breasts and shred them into long thin threads.
  2. In a medium pan, sauté the filling mixture until fragrant. Add shredded chicken and stir until veggies are cooked but still crunchy. Remove from heat and set aside for cooling.
  3. Add grated cheese into the mixture and mix lightly. Avoid mixing too much as this will turn the cheese lumpy.
  4. Fill spring roll sheet with filling, fold and seal with wheat flour paste, then deep fry until crispy and golden brown.
  5. Serve immediately with szechuan sauce or sauce of choice!

Tips:

1.Do not throw the moisture from the chicken. use the same vessel to add the shredded chicken and cook the veggies. 2.Make sure to soak the moisture and let the filling be a little dry. 3.Don't make the flour paste too thick or too thin it wont stick and the spring rolls will open while frying. 4.Don’t fill too much as the spring roll sheet might tear.
