Try these mouth watering chicken canapés, they’re sure to be a crowd pleaser at any party or get together. Also a good comfort food to suit your mood.

Ingredients

Ingredients
  • 20 - 25 canapés
  • cheddar cheese
  • coriander leaf, chopped, to taste
Marination
  • 300 gm boneless, skinless chicken breast, cubed
  • 2 teaspoons chicken lollipop masala
  • 1 teaspoon ginger garlic paste
  • 1 teaspoon cornflour
  • ¼ teaspoon salt
  • 1 teaspoon oil
Canapé mixture
  • 1 medium onion, finely chopped
  • 1 teaspoon red chilly powder
  • 1 teaspoon soy sauce
  • 2 teaspoons tomato ketchup
  • 2 green chillies, slit
  • 1 medium green capsicum
  • 1 teaspoon cornflour paste (mix 2tbsp of water)
  • 2 teaspoons oil
  • 1 medium tomato pureed
  • 2-3 spring onion leaves, finely chopped
  • 2 teaspoon tamarind sauce
  • marination water from the chicken 1 to 2 teaspoons
  • salt, to taste

Instructions

Marination
  1. In a large bowl, season the chicken breast with marination spices. Let sit for 30 minutes to marinate. Reserve the marination water
Canapé mixture
  1. Heat oil in a pot over high heat and then turn the flames to medium-high.
  2. Fry the marinated chicken in batches, until crispy and reddish brown. Set aside for cooling and shred it into thick pieces.
  3. In another pan, add 2 tsp oil and heat it on medium high flame. Add finely chopped onions and fry until translucent and soft.
  4. Add tomato puree and mix it well. Cook this for 1-2 mins.
  5. Add slitted green chillies, red chilly powder, reserved marination water and mix well.
  6. Add grated green capsicum, salt, soy sauce, corn flour paste and mix well.
  7. As water as required, mix well and cook for few secs.
  8. Add shredded chicken, a little water and mix well.
  9. Add tomato sauce and tamarind sauce/ chutney. Cool well to make it a thick dry gravy.
  10. Cover it and cook on a low temp for 5mins. Leave it aside for cooling.
Get it all together
  1. Heat oil in a deep pot and fry canapés until golden and crispy. Drain the canapés on paper towel.
  2. Arrange the canapés in a tray and add spoonful of cooked canapés mixture in it.
  3. Grate generous amounts of cheese until it covers the canapés. Garnish with fresh coriander.
  4. Serve immediately and enjoy!
