Enjoy a creamy, scrumptious pasta with a rich, decadent sauce. Added veggies make this a perfect midweek meal for those cosy nights in.

Ingredients

  • 250 pasta
  • 150 gm cream cheese
  • 2 medium onions
  • 6 large tomatoes
  • 2 red bell peppers
  • 1/2 green zucchini
  • 1/2 yellow zucchini
  • 150 gm brocoli florets
  • 100 gm baby corn slit
  • 5 garlic cloves, finely diced
  • 1 tbsp red chilly powder
  • 1 tbsp sugar
  • 1 tsp turmeric
  • Salt to taste
  • 1 tbsp dried basil leaves
  • 1 tbsp oregano
  • 1 tsp chilly flakes
  • Water as required
  • olive oil

Instructions

Sauce
  1. Add tomatoes, onions, 1 red bell pepper, in a blender and blend until smooth.
  2. Heat oil in a medium sized pan, add garlic and fry until golden brown. Bring the heat to medium, add the blended mixture to the pan and bring the mixture to boil. 
  3. Add red chilly powder, sugar, turmeric, salt and mix well for 2 minutes or until mixture turns bright red.
  4. Add ¼ glass of water and cook the mixture for 10 mins on the medium-low heat. Add red chilli powder and salt if required.
  5. Add cream cheese and let it melt in the mixture. After the cheese has melted cook for another 5 to 7 minutes.
  6. Add finely chopped dried basil leaves  and stir until infused in the mixture.
Pasta
  1. In large vessel, bring to boil 1L water. Add salt and pasta and cook until the pasta has an even shade and is cooked al dente.
  2. Remove and strain the excess water and set aside. Drizzle olive oil on the pasta generously to avoid it from sticking.
For Veggies
  1. Take 2 tablespoon olive in a pan and add 1 red bell pepper, green zucchini yellow zucchini, broccoli and baby corn.
  2. Add oregano and chilli flakes and stir well, adding salt if required.If extra chilly flavour is desired more chilly flakes can be added.
  3. Toss the veggies and corn on either side and cook for about 5 to 7 mins on medium flame and  set aside.
Get it all together
  1. In a big bowl, add the pasta and pour the sauce in batches. Add veggies and mix until well combined.

Tips:

If you feel the sauce is too thick, to maintain consistency after adding the cheese add a little milk and cook it further for another 5 mins. You can add veggies of your choice too. Garnish with parsley, coriander, olives and mozzarella cheese as per choice. Serve with garlic bread!
